Flakiness

The size of the butter bits is directly related to the flakiness of the biscuit. In the heat of the oven, the water inside the butter is turned into steam. The steam rises, and pushes up the dough around it. This creates pockets of air in the finished product. Those pockets are what we call flakiness. The bigger the butter bits, the flakier the biscuit.

Coconut Lime Quick Bread

You’ll feel like you’re in a tropical paradise after sampling this recipe! Try adding a cup of toasted chopped Brazil nuts for added flavor.

Makes 1 loaf

½ cup (1 stick) unsalted butter

1¼ cups granulated sugar

Grated zest and juice of 4 limes, reserved separately

2 eggs

1½ cups cake flour

1 teaspoon baking powder

½ teaspoon kosher salt

½ cup sour cream

1½ cups shredded unsweetened coconut, lightly toasted

½ cup water
